A Christmas ‘must do’ tradition that you should never leave off your list.

The Christmas tree is up, the Christmas lights are twinkling in the front garden, the Christmas cards are posted and shopping done and all gifts wrapped and it’s only December 12th! Does this sound like you? Most likely …NOT! We know ‘there is so much to do and so little time’.

However, amid the festive hustle and bustle, there’s one Christmas ‘must do’ tradition that you should never leave off your list. Take an afternoon break, gather the kids and have a festive cookie bake-a-thon! Chocolate chip, oatmeal, peanut butter, gingerbread and double choc chip wammy!

Double choc chip cookies!

Ingredients
100g/3.5oz dark chocolate, chopped
80g/2.8oz butter, chopped
1 cup plain flour
2 tablespoons cocoa powder
¼ teaspoon bicarbonate of soda
1 cup caster sugar
1 egg, beaten lightly

How to Make
Place the chocolate & butter in a small saucepan over low heat. Ask mum or dad to stir with a silicone spoon until just melted. Pour mixture into a mixing bowl.

Sift the flour, cocoa & bicarbonate of soda into the chocolate mixture, then stir the sugar & egg until combined.

Cover & refrigerate for about 15 minutes or until mixture is firm enough to roll into balls.

Ask mum or dad to preheat the oven to 180ºC/356ºF.

Line a baking tray with some baking paper.

Take a tablespoon of the mixture & roll into a ball, then place on baking tray. Repeat with remaining mixture, allowing 8cm between each ball for the cookies to spread.

Ask mum or dad to place the tray in the oven & bake for 15-20 minutes. Mum or dad will also need to help you get
the trays out of the oven too!

Cool the cookies on the tray.

Makes about 20 tempting double choc chip cookies!
