Cucumber, Mango and Apple Mock Mule

Ingredients

4-5 slices of cucumber
1fl oz sugar syrup
1½fl oz apple and mango juice
1½fl oz fresh lime juice
Ginger Beer

Method

Muddle the cucumber and syrup in the bottom of a shaker. Add the lime juice, apple and mango juice, and ice. Shake vigorously until the shaker feels cold. Strain in to a copper mug and top off with ginger beer.

Bramble

Ingredients

40ml gin
10ml sugar syrup
15ml crème de mur (blackberry liqueur)
15ml lemon or lime juice
Blackberries and mint to garnish

Method

Add ice to a tumbler. Pour the gin, sugar syrup and lemon juice into a cocktail shaker filled with ice and shake well. Strain the mixture over the ice then carefully add the Crème de Mur by pouring over the back of a mixing spoon. Garnish with a perfect blackberry or two and a sprig of mint.

French 75

Ingredients

Ice
1½ fl oz. VSOP Cognac
½ fl oz. Simple Syrup
½ fl oz. fresh lemon juice
Sparkling wine

Method

Fill a cocktail shaker with ice. Add the cognac, simple syrup, and lemon juice and shake well. Strain into a martini glass, top with sparkling wine, and serve.

Gimlet

Ingredients

60ml Dry Gin
20ml Rose's lime cordial
Twist of lime
Garnish with lime zest

Method

Pour the Gin and cordial into a mixing glass then fill with ice cubes.

Stir well with a mixing spoon to chill and dilute.

Taste the gimlet before serving to ensure the ice has diluted the Gin enough (the alcohol should feel pleasant not aggressive) then strain into a Cocktail glass.

Squeeze a wedge of lime over the glass, ensuring that the lime oils are expelled across the surface of the drink.

Garnish with fresh lime zest and serve.

Mojito

Ingredients

1 lime, cut into wedges
20 fresh mint leaves
2½ Tsp. granulated sugar
Handful of ice
65ml / 2½ fl oz white rum
Splash of soda water, to taste
Fresh mint sprig, to garnish

Method

Place the mint leaves in to a glass and muddle (bruise) with a wooden muddler or the end of a clean rolling pin, to release the flavour.

Add the rum, sugar and the juice of one lime to the mint leaves.

Add the ice.

Top with soda water and use a spoon to mix the flavours together.

Garnish with a sprig of fresh mint.

Killer Mai Tai

Ingredients

Ice
100ml / 3½ fl oz spiced rum
50ml / 1½ fl oz coconut-flavoured rum
1 Tsp. grenadine syrup
85ml / 3 fl oz pineapple juice
60ml / 2 fl oz orange juice

Tropical fruit and flowers to garnish.

Method

Add ice, spiced rum, coconut rum, grenadine, pineapple juice and orange juice to shaker. Shake vigorously and strain into glass full of ice, garnish and serve.
