A romantic seasonal delicacy, Oyster

Your seasonal guide to fresh produce that is at its best each month. This October we will inspire you with a recipe intended to add a little magic to your evening.

Eating seasonally, when produce is packed full of flavour, is without a doubt the best way for you to enjoy food at its best. Each month we will be highlighting what’s in season and also share one of our favourite recipes using some of these great ingredients. We hope that it’ll inspire you to get in the kitchen, start cooking and ultimately support great British food.

This month’s recipe:

Tempura oysters with chilli dipping sauce 

Oysters are an excellent source of zinc, which is well known for its immune boosting properties and powerful antioxidants. Zinc is also important for controlling progesterone levels responsible for how sexy you feel, making these delicious delicacies a natural aphrodisiac.

Oysters are wonderful raw, smoked, baked or as part of a recipe but can be a little tricky to prepare. Here are some great tips to get you started:

  • Choose fresh oysters that have been harvested and processed according to safety guidelines.
  • Throw away any oysters that have broken shells.
  • A live oyster should close its shell when you tap it, if it doesn’t, throw it away.
  • When fresh oysters are cooked their shell should open, if it doesn’t, throw it away.
  • Fresh oysters should be refrigerated at 40°F / 4°c or lower until used.
  • Cook oysters gently to avoid turning them chewy. When the edge begins to curl they are ready.
