Hake and Chips: A Twist on a British Classic

Eating seasonally, when produce is packed full of flavour, is without a doubt the best way for you to enjoy food at its best. Each month we will be highlighting what’s in season and also share one of our favourite recipes using some of these great ingredients. We hope that it’ll inspire you to get in the kitchen, start cooking and ultimately support great British food.

THIS MONTHS RECIPE 

Our season’s favourite, hake is part of the cod family of fish. Packed full with fatty oils, which are used to promote the production of ‘good’ cholesterol, hake is considered to be the lean section of cod. This freshwater fish is also packed with high quality proteins and vitamins and minerals, making it a great alternative to oilier fish like, mackerel or sardines.

Much like cod, hake can be grilled and served whole or filleted and served fried, battered or baked like our recipe of the season Mini Hake and Chips.

As a freshwater and saltwater fish, hake is well known for its light flavour and delicate texture. Therefore, the addition of simple flavours like lemon or lime juice, or more robust flavours like spices and herbs can create a tasty and heart-healthy meal for lunch or dinner.  Hake can take strong flavours particularly well, therefore the introduction of tomatoes, chorizo, garlic and paprika work really well too.

Whether you purchase hake from a fishmongers or the supermarket, it should always be eaten fresh, and should always have a white flesh. It should always be free of signs of dryness, greying or browning and have that just caught out of the sea, fresh smell.
