Bake Better Bread


450g strong white bread flour 

7g dried yeast 

10g salt 

300ml water 


Weigh the flour in a large mixing bowl and add the salt and yeast. 

Using your hand, blend the flour and make a well in the centre. 

Pour in the water and mix until it forms a soft ball of dough in your hand and there is no dough left in the bowl. 

Transfer the dough onto a clean, lightly floured work surface and knead for 10 minutes until smooth and stretchy. 

Return the dough to the mixing bowl, cover and leave to prove until it doubles in size. 

Once the dough has doubled in size scoop it out onto a floured work surface and knock the air out. 

Shape the dough into a nice round ball and tuck the creases underneath.

Drizzle a little olive oil onto a sheet of parchment paper. Place the dough on the top, fold the sides up and lift into a bowl. 

Leave the dough to prove until it doubles in size. This should take 30-40 minutes.

Pre-heat your casserole dish in the oven at 200°c while your bread proves. 

Score the bread, place the lid on the dish and pop it in the oven at 200°C for 35-40 minutes until golden and crisp.

If you like a heavy crust on your bread, remove the loaf from the dish and bake for a further 10-15 minutes.
