Black Bean Burgers

Ingredients:

 

2 tins black beans, drained and rinsed

½ red onion

1 spring onion

2 crushed gloves of garlic

1 egg, beaten

Handful of breadcrumbs

½ red chilli

1tsp cumin

1 avocado

Brioche burger buns

 

Method:

 

Mash the black beans with a fork in a bowl. Remove as much excess water as you can.

Finely chop the red onion, spring onion and red chilli. Add the crushed garlic, bread crumbs and cumin, then add this to the crushed black beans.

Combine together and add the beaten egg slowly as required.

Form the mixture into 4-5 burgers.

Grill the burgers for 4-5 minutes on each side.

Serve in brioche burger buns with mashed avocado.
