Blueberry Friands


200g butter

2 cups pure icing sugar

2 tablespoons plain flour

1 1/2 cups ground almonds

6 egg whites

150g blueberries

Icing sugar, to serve


Preheat oven to 230°C / 446°F.

Grease Friand pan.

Melt butter in a small saucepan over a medium. Simmer until light golden. Remove from heat. Set aside cool.

Sift icing sugar and flour into a large bowl. Stir in ground almonds. Gradually add egg whites, stirring constantly with a metal spoon until combined.

Add butter and stir. Stir in berries.

Three-quarters fill Friand pan with mixture.

Bake Friands for 5 minutes. Reduce oven to 200°C / 392°F and bake for 15 minutes or until a skewer inserted into the center comes out clean.

Cool in pans for 10 minutes. Turn onto a wire rack to cool completely. Dust with icing sugar. Serve.
