Broccoli, Lemon and Quinoa Soup

Ingredients

450g of broccoli 

1 leek, chopped

1 large white onion, chopped 

2 cloves of garlic, crushed

1 tbsp. extra virgin olive oil 

1 litre vegetable stock

2 tbsp. lemon juice

A pinch of salt and pepper to season

100g cooked quinoa

Method

Sauté the onions in the olive oil in a large saucepan until soft. Add the garlic for a further couple of minutes

Add the broccoli, stock and seasoning, bring to the boil and reduce to a simmer for 5-10 mins until broccoli is soft

Remove from the heat and leave to cool

Blend until the desired consistancy is acheived

Return to the saucepan and stir in the cooked quinoa and lemon juice

Re-heat as required and serve with fresh bread
