Cheesy Chorizo Bites


50g Salted butter 

100g Plain flour 

50g Polenta 

3 Large free range eggs

150g Mature cheddar cheese grated 

90g Sliced chorizo sausage chopped into small pieces

1 tbsp Nigella seeds 

Here’s how 

Melt the butter and 250ml of water together in a medium sized saucepan. 

Once the water comes to the boil and the butter has melted, remove from the heat and add the flour and polenta. 

Stir the mixture together for 1 minute, then add the eggs one at a time until all fully mixed in (I use an electric hand mixer for this)

Finally add the cheese and chorizo and stir together. 

Place the mixture into the fridge for 1 hour to firm up.

Divide the chilled mixture into 30g portions and roll into balls. (use wet hands to help achieve a smooth finish)

Sprinkle each portion with nigella seed to help give a nice savoury flavour. 

Chill the balls on a non stick baking tray for 1 hour before baking in a pre heated oven 200c for 20 minutes. 

Enjoy these tasty snack with a chilled glass of wine for a beer.
