4 cups cherries (fresh or frozen)
1 cup water
2-4 tbsp. icing sugar
Pit the cherries using a cherry pitter.
Using a blender, puree the cherries, water and sugar until smooth.
Using a fine sieve strain the mixture – discard any solid pieces.
Process the mixture in an ice-cream maker according to the instructions.
Freeze in an air tight container until ready to serve.
