Ingredients
4 chicken breasts skinless and boneless
2 red onions diced
1 green chilli chopped
2 Red peppers diced
2 tbsp cumin
2 tbsp smoked paprika
1 tsp cinnamon
500ml bottle of beer
400g chopped tinned tomatoes
1 chicken stock cube
30g 70% dark chocolate
1 lime
1 handful of fresh coriander
Here’s how
Place a large non-stick pan onto a medium heat.
Add a drizzle of olive oil into the pan, then put the chicken breasts in to cook for 3-4 minutes on each side or until golden brown.
Add the chopped onions, peppers and chilli and cook for a couple more minutes.
Sprinkle in all the spices, followed by the bottle of beer.
Add in the tin of chopped tomatoes and a chicken stock cube,
Simmer for 30 minutes on a gentle boil to reduce the liquid and increase the flavour.
Finish the dish with dark chocolate, a squeeze of lime juice and some freshly chopped coriander.
This is great for doubling up and making extra for another night as you could slice up the chicken and mix it all up with some cheese and place in tortilla wraps and bake for a cracking chicken mole burrito.
