Chips with Garlic, Fennel and Chilli Salt


6 Maris piper potatoes

2 tsp sea salt

1 tsp garlic powder

1 tsp dried onion powder

1 tsp fennel seeds

1 tsp chilli flakes

4 tbsp olive oil


Here’s how

Peel and cut the potatoes into 1cm thick slices.

Cut the potato slices into 1cm chips.

Wash the chips under cold water to remove the starch.

Cook the chips in salted boiling water in a large pan.

The potatoes should boil for 4 minutes, then drain and leave to cool and get all the steam out of the potatoes.

Meanwhile, place all the dried ingredients into a pestle and mortar and grind together to create an amazing seasoning combo.

Drizzle the cooked, cooled and dried potatoes with the olive oil and spread out on a non-stick baking tray.

Cook the chips in a preheated oven 190c until golden and crisp.

Remove from the oven and sprinkle the seasoning blend over the chips.

Keep the remaining seasoning in a jam jar in the cupboard for next time.
