Ingredients:
150g salted butter (room temperature)
45g soft brown sugar
40g caster sugar
1 tsp caramel flavouring or vanilla extract
1 large free-range egg
225g plain flour
1/2 tsp bicarbonate of soda
1/2 tsp salt
210g dark chocolate chips
Method:
Place the butter into a mixing bowl with both sugars and stir together until light and fluffy.
Add in the egg and caramel or vanilla extract and stir together.
Sieve in the flour, add the bicarb, salt and chocolate chips.
Stir the mixture together until you have cookie dough.
Portion out using an ice cream scoop and place on a baking tray with a non-stick baking tray liner to prevent any sticking.
Bake in a preheated oven at 170c for 8-10 minutes.
