Chocolate Mousse


Chocolate Mousse
Serves 4 


200g Chocolate (100g Dark and 100g Milk)
3 egg whites
1/2 tsp Salt
75g Pre made custard
1/2 tsp Salt
20ml Espresso strength coffee
4 tbsp Greek Yogurt 


Place both the chocolate into a mixing bowl and sit over a pan of simmering water to melt. 

Meanwhile separate 3 eggs and place the whites into mixing bowl, add a sprinkle of salt and whisk up for 2 minutes. 

Add a tablespoon of sugar and whisk again, then add a further tablespoon of sugar and whisk again until the egg whites are light and fluffy. 

Add the custard to the chocolate but don’t stir in until the chocolate has melted and the custard has had time to warm up little. 

Pour the coffee into the chocolate and custard and mix together with a small sprinkle of salt. 

Add half the whisked up egg white to the chocolate bowl and stir in gently. 

Add the remaining egg whites to the chocolate and carefully fold the mixture together until the whites have disappeared. 

Spoon the mixture into glasses and place in the fridge for 1 hour. 

Finish with a spoonful of yogurt and a few chocolate shavings.
