Chocolate Mud Cake

Originating from the Mississippi Mud Pie, Chocolate Mud Cake has become an age old classic enjoyed by both adults and youngsters. Everyone seems to have their own version of the recipe, and we are certainly proud of ours! Why not have a go at trying KitchenCrafts very own Mud Cake recipe.

Single Layer Mud Cake Ingredients:

250g unsalted butter, plus extra for greasing
200g dark chocolate
1 tbsp espresso powder
1 tbsp cinnamon powder
100ml whole milk
250g self-raising flour
40g cocoa powder
250g caster sugar
4 large free-range eggs, lightly beaten
1 tsp vanilla extract
150ml soured cream

Single Layer Ganache Topping Ingredients:

150g milk chocolate
150g dark chocolate
100ml double cream
50g unsalted butter

Method:

  1. Preheat the oven to 160°C (non-fan assisted) 140°C (fan assisted).
  2. Grease and line a deep, 23cm loose bottom cake tin, then set aside.
  3. Melt the chocolate, butter, espresso powder, cinnamon powder and milk in a porringer until smooth. Remove from the heat and set aside.
  4. Sift the flour and cocoa powder into a bowl, then add the caster sugar. Fold into the chocolate mixture along with the eggs, vanilla extract and soured cream.
    TOP TIP: whisk the eggs before adding to mixture for smooth easy folding.
  5. Pour into the prepared cake tin and bake in the oven for 1 hour to 1 hour 10 minutes. The cake is ready when a skewer inserted into the centre comes out with some moist crumbs sticking to it but not any raw cake batter. Set aside to cool completely in the tin.
  6. For a double layer cake, repeat the first 5 steps again to create 2 layers of chocolatey sponge.
  7. To make the ganache topping, melt the ingredients together in a porringer, stirring occasionally. Set aside to cool at room temperature for 30 minutes.
  8. Remove the cake from the tin and leave to cool if not already. Spread evenly all over with the ganache, swirling it into attractive patterns.
  9. For a double layer cake, repeat steps 7 – 8 with the second layer of sponge, and layer on top of each other for messy chocolatey goodness.
