Chocolate Orange Panettone

Ingredients

First dough:

3/4 cup plain flour

1/16 tsp instant yeast

1/3 cup water

Dough:

2 1/4 cup plain flour

1/3 cup granulated sugar

1/4 cup unsalted butter

1/4 cup lukewarm water

2 large eggs

1 tbsp instant yeast

1 1/4 tsp salt

1 tsp vanilla extract

1 tbsp orange liqueur

1 cup candied orange peel

1 cup chocolate pieces

Place the flour, yeast, and water in a large mixing bowl and stir together until combined.  Cover, and allow to rest for 8 to 12 hours, or overnight.

Panettone:

2 1/4 cup plain flour

1/3 cup granulated sugar

1/4 cup unsalted butter

1/4 cup lukewarm water

1 tsp vanilla extract

1 tbsp orange liqueur

1 cup candied orange peel

1 cup chocolate pieces

Method

For the first dough:

Place the flour, yeast, and water in a large mixing bowl and stir together until combined.  Cover, and allow to rest for 8 to 12 hours, or overnight

For the panettone: 

To the bowl of starter, add the flour, sugar, butter, water, eggs, yeast, salt, vanilla, and orange liqueur and mix until combined, then knead for 10 minutes. Cover, and allow to rise in a warm place for 1 to 1 1/2 hours

Gently deflate the dough, knead in the candied orange peel and chocolate pieces, shape into a ball and place into a mould. Cover and allow to rise for around 1hr 30mins

Pre-heat the oven to 200°C and bake for 10 minutes. After 10 minutes, turn the oven down to 190°C and bake for another 10 minutes. After 10 minutes, bake for a further 20 minutes at 170°C
