Chorizo and Egg Wrap
Serves 1


 2 medium free-range eggs

Salt and pepper

Sprinkle of chilli flakes (optional)

30g sliced chorizo sausage

1 tortilla wrap 10”



 Pre heat a non-stick frying pan.

Meanwhile crack both eggs into a mixing bowl and whisk together.

Season with a little salt, pepper and a sprinkle of chilli if you want it spicy.

Slice the chorizo sausage as thinly as possible before you start cooking.

Add a splash of olive oil into the pan.

Pour the egg mixture into the pan, making sure you roll the pan to make sure the egg mixture covers the base of the frying pan.

Add the sliced chorizo and cook for 2-3 minutes.

Lay the tortilla wrap on top of the egg while it’s cooking.

Continue to cook for 1 more minute, then remove from the heat and turn out onto a chopping board.

Roll the wrap up and cut in half.
