Christmas Eggnog Loaf

It’s beginning to look a lot like Christmas!

I haven’t gone as far as putting my Christmas Tree up yet but I’m definitely feeling the Christmas spirit early this year and of course I don’t need any excuse to get baking so this week I decided to get my Christmas apron on and bake an Eggnog loaf.

This loaf is a great alternative to Christmas pudding or the perfect treat instead of a mince pie (who am I kidding I will still consume my own body weight in mince pies) , I have served it by itself, with cream and with warm creamy custard and all have gone down fantastically with friends and family.

Here’s my step by step guide to this very festive treat.

Ingredients

2 eggs

350ml of eggnog

2 tbsp rum

230g white sugar

1 tsp vanilla extract

115g butter (room temperature)

270g all purpose flour

1 pack of vanilla pudding mix

2 tsp baking powder

½ tsp salt

½ tsp ground nutmeg

Method

Preheat oven to 180°c

Into a large mixing bowl combine eggs, eggnog, rum, sugar, vanilla and butter. Mix well but bear in mind that the butter will remain lumpy, this is normal.

In a separate mixing bowl sift the flour, pudding mix, baking powder, salt and nutmeg and combine well.

Add the dry mixture to the wet mixture, don’t over mix trying to remove the butter lumps as these will melt when cooking.

Transfer your mixture to your loaf tin.

Bake for 45-55 minutes or until a cake tester comes out clean.

Cool on a wire tray.

Serve with cream, custard, or just a nice cup of tea.
