Courgetti Spaghetti with pesto and balsamic tomatoes

Ingredients

8 baby plum tomatoes, chopped

1 tbsp olive oil

Crushed ½ garlic glove

1 tbsp balsamic vinegar

1 spiralised courgette

2 tbsp pesto  

Method

In a large mixing bowl miss chopped tomoatos balsamic vinegar and garlic.

Heat a small amount of oil in a frying pan and add the mixture, cook for around 5 minutes.

Add spiralised courgette to boiling water for 30 seconds and then drain.

Mix the spiralised courgette with the pesto and place in a bowl, add the tomato mix on top and serve.
