Epic Lasagne


1 White onion large chopped 

3 garlic cloves peeled and chopped 

1 tsp mixed herbs 

250g Minced chicken or Beef 

250g cooked grains/lentils cooked

2 sticks celery chopped finely 

2 carrots peeled and chopped finely 

200ml red wine

1x 400g tinned chopped tomatoes



250g dried lasagne sheets 

For the Sauce 

50g Butter 

50g Plain Flour flour

500g Milk 

1/4 Nutmeg whole 

Salt and pepper 

150g Grated cheese 

Here’s how

First preheat a large deep frying pan, then add a splash of olive oil and add in the onions and garlic. 

Season with salt, pepper and mixed herbs.

Once softened add the minced beef or chicken and cook for 5 minutes on a medium to high heat. 

Add the chopped celery and carrots and continue to cook. 

Almost there!  add in the cooked lentils, if you are using tinned lentils make sure you pour them through a sieve, wash them well and drain before adding to the pan. 

Pour in the red wine and boil away the alcohol for 2 minutes, then add the chopped tinned tomatoes. 

Fill the empty tin of tomatoes with water and add to the pan. 

Simmer the pan for 20-30 minutes until the sauce has reduced.

While the tomato sauce is simmering it's time to make the white sauce. 

Melt the butter in a medium pan and add the flour. 

Stir together continuously on low heat to cook out the flour for 1-2 minutes.

Pour in the milk a little at a little stirring all the time until it is all mixed in. 

Continue to heat the sauce until it thickens.

Season with a little salt, pepper and nutmeg. 

Stir in 100g of the cheese until it melts and you’re done. 

To make the lasagne remove 2 thirds of the meat sauce and place in a bowl 

Cover the remaining meat sauce with a layer of pasta sheets. 

Add a ladle of white sauce and spread it out. 

Top with half of the remaining meat sauce, then cover with pasta sheets. 

Pour over another portion of the white sauce and spread evenly, 

Finally, add the remaining meat sauce and cover with pasta and the remaining white sauce 

Make sure all the pasta is covered in white sauce, then add the last of the grated cheese before placing it in a preheated oven 170c for 40-45 minutes.
