Halibut Pot Pie with Mashed Potato Crust

30g butter
1 large fennel bulb, thinly sliced
2 Shallots sliced
16g plain flour
Salt and freshly ground black pepper
1½ cups vegetable broth
680g pounds halibut fillets, cut into 1-inch cubes
150g spinach of baby spinach
3 large potatoes mashed 


Preheat oven to 180°C.

Boil potato’s in a large pan until soft.

Melt butter in a large saucepan over a medium heat and then add in the sliced fennel and shallots. Cover and cook until tender, stirring occasionally. Sprinkle with flour, salt and pepper and turn the heat up slightly to sauté. Add in the vegetable broth and bring to the boil, stirring often. Add in the fish and spinach, cover and simmer over a medium heat until the fish is almost cooked through (5 minutes). Whilst you are waiting, mash the potato until light and fluffy.

Transfer the fish mixture to a baking dish and spoon the mashed potato over, covering it completely. Cook in the centre of the oven for 30 minutes. Leave to cool for 5 minutes before serving.
