Granola Bars

Ingredients

8 ounces rolled oats

1 1/2 ounces sunflower seeds

3 ounces sliced almonds

1 1/2 ounces wheat germ

6 ounces honey

1 3/4 ounces dark brown sugar

1 ounce unsalted butter

2 teaspoons vanilla extract

1/2 teaspoon salt

6 1/2 ounces chopped dried fruit

Method

Butter a 27cm x 21cm (10½" x 8") inch baking tray and set aside. Preheat the oven to 180°C / 350°F.

Spread the oats, sunflower seeds, almonds, and wheat germ onto a roasting pan. Place in the oven and toast for 15 minutes, stirring occasionally.

In a medium saucepan combine the honey, brown sugar, butter, extract and salt, place over medium heat. Cook until the brown sugar has completely dissolved.

Remove the oat mixture from the oven, add the oat mixture to the liquid mixture, add the dried fruit, and stir. Place mixture into the baking dish, place in the oven to bake for 25 minutes.

Remove from the oven and allow to cool.

Cut into squares.
