Gut Friendly Sweet Potato with Avocado and Chilli Bean Salsa

Ingredients 

2 Small / Medium sized sweet potatoes
1 Avocado 
1 Can of mixed beans
1 Can of chopped tomatoes 
Chilli Flakes
Parsley

Method

Preheat the oven to 180 °. One at a time poke holes into the potato and place on a microwavable plate in the microwave for 5 minutes each. Then place onto a baking tray in the centre of the over for 35 minutes.

You will then need to chop up the avocado into small chunks. For the chilli, in a bowl place the chopped tomatoes, drained mixed beans and a sprinkle of chilli flakes and stir.

Once the potato is crispy on the outside and soft in the middle, take out from the oven and slice them down the middle.  Then fill with your chilli and avocado to your liking and top with some fresh parsley.
