Ham and Cheese Crepes

Ingredients

55g plain flour
pinch salt
1 free-range egg
140ml milk
oil for frying
80g Emmental, grated
80g good quality smoked ham

Method

Whisk the flour, salt, half the milk and eggs in a large bowl until smooth. Add the remaining milk and whisk again until smooth. Pour the batter into a jug. Heat a non-stick frying pan and drizzle a little oil in centre. Pour a little of the batter into the pan and spread the batter thinly and evenly with a pancake spreader. Cook for two minutes. Flip over using a pancake flipper or toss the pancake. Add some of the ham on top of the pancake and sprinkle with a little of the cheese. Cook the pancake for a further one to two minutes, fold in half and serve.
