Healthy Coffee and Mixed Seed Flapjack


180g Low-fat margarine or (butter if you prefer)

250g Dates

75ml Strong coffee

6 tbsp Mixed seeds

1 tbsp Chia seeds (these seeds will help bind the flapjack together)

80g Walnuts

225g Oats

Here’s how

Place the margarine, dates and coffee into a pan and heat gently until melted.

Using a stick blender blend until smooth.

Add the seeds, nuts and oats and stir together.

Spoon the mixture into a 20cm square deep tin.

Using the back of a spoon press the mixture down and bake in a pre heated oven 160c/320f/Gas mark 3 for 20 -25 minutes.

When baked remove from the oven and leave to cool before cutting into portions.
