Let's preserve it!

Preserving may seem old-fashioned and something grandma would do out of habit or necessity, but it has once again become so popular and for all the right reasons. Pickling is so simple, cheap, avoids waste and the results are delicious.

Autumn is the traditional time for pickling and preserving as it is harvest time but don’t let this hold you back. All manner of fruits and vegetables are available all year round now so it doesn’t matter whether you have access to home-grown vegetables, a local farmers market or just buy your produce in the supermarket, everyone can get involved. You can turn plums into jam, apples into jelly and tomatoes into chutney.

For beginners we recommend pickling baby onions. They may be small but they really pack a punch when it comes to flavour. As their name suggests, they're best pickled in vinegar spiked with dried chilli, coriander seeds, mustard seeds and black peppercorns to enhance their flavour and achieve mouth-watering results.

Best served with chunks of warm crusty bread and wedges of mature cheddar cheese, you’ll soon see that pickled produce doesn’t seem to last as long as the name suggests as it is simply so delicious and makes a perfect finishing touch to most meals.
