May Day picnic anyone?

I am refusing to check the weather forecast for this weekend as come rain or shine I’m determined to have a huge family picnic on May Day.

I am so excited for a fun filled day enjoying delicious food, hilarious games and some beautiful new picnic wear I have been dying to try out!

I didn’t want this picnic to be just another picnic so I’m ditching the usual soggy sandwiches in favour of a slightly more exciting selection.

I will be starting my picnic feast with something for the kids, mini pasties are fantastic as that are so much easier for the kids to handle whilst they are trying to continue their games and I know they are still getting something filling and tasty. For the grown-ups I have decided to make low fat curried chicken salad wraps, I love these wraps as they are packed full of flavour and I don’t feel guilty for tucking into more than one! Find my recipe here.

I usually always make a quiche for a picnic so sticking with tradition I’m going to make a salmon and spinach quiche, wonderfully fresh and tasty it’s a guaranteed winner. Click here for the full recipe.

I absolutely love the trend of presenting food and drink in a variety of different shaped jars that is sweeping the nation at the moment! I love presenting anything I can in a simple jar, from starters to desserts and wonderfully fruity cocktails, it really gives a fun finish to your presentation. Finally I will be making some Elderflower and Grapefruit cordial to refresh the troops.
