Mexican Brunch


Serves 4

8 Duck eggs (you can use hens eggs if you prefer)

Salt and pepper 

1 tsp Smoked chipotle paste 

2 tbsp Chopped coriander 

2 tbsp Olive oil for cooking each portion 

16 Sliced of chorizo sausage 

4 10” Tortilla wraps 

Here’s how 

Whisk the eggs up in a large mixing bowl with the salt, pepper, chilli paste and chopped coriander. 

Add a small amount of oil to a non stick frying pan on a medium heat. 

Pour enough of the egg mixture to cover the pan and roll it around to cover the base. 

Lay 4 slices of chorizo on top of the egg mixture while it is cooking 

Once the mixture has Cooke for approximately 90 seconds lay one of the tortilla wraps on top, this will trap the heat in an continue the cooking process. 

Leave the pan on the heat for 30 more seconds, then remove from the heat and flip over onto a board or plate. 

Roll the wrap ups and serve.
