Pasta is the way to a man’s heart!

I have wanted to make my own pasta for some time but needed to allow myself plenty of time as I feared the process may be rather time consuming. So with Valentine’s Day looming I thought it would be the perfect opportunity to put as few hours aside to create an Italian themed feast for my other half.

If you’d like to give it a go, here’s how to do it –

Start with 500g of flour in a mixing bowl, make a hole in the centre and crack 4 eggs into the hole. Using a whisk, slowly mix together, taking a little flour from the sides until the eggs and flour are blended well.  

Tip: My mixture was a little too dry and crumbly so I added a little lukewarm water. If you find your mixture is too wet, add a little flour. A good mixture must never stick to your fingers!

Remove the mixture from the bowl and place it on a slightly floured worktop. Knead it with your hands until it is of an even consistency.

Place the mixture on a cloth and cut it into several pieces.

Tip: I cut mine 3 pieces at a time and made them about 1cm thick, you can cut them all at once but this will mean the pasta will dry out faster so will be harder to work with.

Set up the pasta machine as per the instructions on the packaging, (I used the World of Flavours Italian Complete Pasta Making Set), ensure you have set the dial on the side to number 1 and then feed through your first piece of pasta.

Tip: I fed mine through about 8 times and sprinkled a little flour every so often to ensure the dough didn’t stick to the rollers.

Once you are happy that the dough can’t be made thinner adjust the rollers to the next setting to decrease the space between the rollers, again I fed the dough through about 8 times. Keep adjusting the rollers and feeding the dough through until you reach the desired thickness.

Tip: I found that you must only adjust the rollers one setting at a time as missing increments will jam the rollers and may damage them.

The pasta machine has many different attachments that make a variety of pasta types (I decided for this meal I would stick to something all my family love, Lasagne.) Let the pasta rest for 10 minutes to ensure it isn’t too soft to work with. Put the Lasagne attachment in place and begin feeding the dough through SLOWLY! Once happy with the pasta sheets, let them dry naturally before using them.
