Prawn Courgetti with Soy and Ginger Dressing

Ingredients

4 courgettes

150g cooked prawns

60ml vegetable oil

30ml rice wine vinegar

30ml reduced-fat soy sauce

½ onion, chopped

2 tbsp. caster sugar

1 tbsp. tomato puree

2 tsp. minced ginger 

Method

Spiralize each courgette into vegetable strands.

Add to steaming basket along with the prawns and steam for 3-4 minutes

Put the vegetable oil, soy sauce, vinegar, caster sugar puree, ginger and onion into the dressing bottle, shake and pour over the courgettes and prawns

Toss to combine
