Raspberry, Banana and Coconut Overnight Oats

Ingredients

⅓ cup oats

⅓ cup coconut milk

⅓ cup natural yoghurt

¼ cup frozen raspberries

1 tsp. vanilla extract

1 tbsp. maple syrup

2 tbsp. chopped almonds

2 tbsp. dried coconut

Method

In a small bowl add the oats, coconut milk, yoghurt and raspberries (reserving a few) and mix together

Mash half the banana and add to the mixture

Add vanilla extract, maple syrup and chopped almonds and mix together

In a medium sized jar, add half the mixture to the bottom

Slice the other half of the banana and add a few slices on top

Add a few raspberries

Top with the rest of the oat mixture

Sprinkle with the dried coconut and remaining raspberries

Refrigerate overnight
