Roasted Cauliflower

 

Ingredients:

4lbs of cauliflower, diced into small pieces

Fresh Parsley

2 chopped garlic cloves

3tbsp olive oil

1 tbsp Lemon juice

 

Method

Heat oven to 200C/180C fan/gas 6. Then place the cauliflower, garlic and parsley in a large bowl, toss with the oil and lemon juice and season generously. Spread evenly onto a baking sheet and roast for 22 mins, turning halfway, until cauliflower is cooked and caramelised.

Dress with pine nuts and enjoy!
