Roasted Maple and Balsamic Brussels Sprouts with Red Grapes and Walnuts

Ingredients

250g brussels sprouts

100g red grapes

1/4 cup maple syrup

1/4 cup balsamic vinegar

2 tbsp. walnuts, chopped

2 cloves garlic, grated

1 tbsp. fresh thyme

1 tbsp. olive oil

Salt and pepper to taste

Method

Preheat the oven to 170°C.

For the dressing, combine the olive oil, balsamic vinegar, maple syrup, thyme, salt and pepper in a small mixing bowl.

Add the grapes, sprouts and walnuts to the bowl and make sure they are coated fully in the dressing.

Pour onto a lined baking sheet and spread out evenly.

Bake for 45 minutes- or until brussels sprouts and grapes are soft and blistered.

Garnish with more fresh thyme as needed
