Roasted Vegetables

Ingredients

1 aubergine
3 peppers 
3 red onions 
1 courgette
3 garlic cloves
250g parsnips 
100g beetroot 
Olive Oil 
Salt & Pepper

Method

Wash and chop up all of your vegetables however you desire, place on a baking tray and drizzle with olive oil and season with salt and pepper.

Place in a preheated oven at 200° for 45 mins.
