Ingredients:
700g sausages
1 shallot or red onion
1 lime
1 tsp smoked chilli flakes or chipotle paste
1 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp nigella seeds
2 tbsp dark brown sugar
1 beaten egg
320g ready rolled puff pastry
Method:
Carefully cut all the sausages out of their skins and place in a mixing bowl.
Finely dice the shallot and add to the bowl with the juice of a lime.
Add the spices to the sausage meat and mix together thoroughly to make sure the flavours are fully distributed.
Cut the puff pastry in half longways, divide the sausage meat between both sheets of the pastry in a sausage shape.
Brush the edges of the pastry with beaten egg, then roll over the pastry to create your sausage rolls.
Brush the outside of the rolls with the remaining beaten egg and sprinkle with some more seeds and spices.
Cut the rolls into portions and place on a non-stick baking tray.
Bake for 15 -20 minutes until golden, crisp and fluffy.
