Ingredients
2 eggs, slightly beaten
2 teaspoons granulated sugar
225g / 8 floz milk
225g / 8 floz flour
¼ teaspoon salt
Icing sugar mixed with a little powdered cinnamon
Vegetable oil, for frying rosettes
Method
Mix eggs, granulated sugar and milk together, stir in flour and salt and then beat until smooth.
In small saucepan, heat 1½ inches of vegetable oil to 400°C for rosettes.
Dip the rosette iron into the hot oil then carefully dip into batter (it should sizzle), taking care not to submerge the whole rosette into the batter.
Carefully transfer the rosette iron back to the oil and fry until golden (the batter will release from the iron as it cooks).
Dip the rosette into a plate of icing sugar and powdered cinnamon.
