4 tablespoons unsalted butter
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups milk
2 large eggs
3 1/2 ounces smoked salmon
1 red onion, peeled and finely diced
6 tablespoons fresh dill
Creme fraiche (or sour cream) for topping
Prep waffle iron by lightly greasing and heating on the hob, rotate occasionally to heat the iron completely.
In a large bowl, whisk together the flour, baking powder, salt, and pepper. In another bowl, whisk together the milk and eggs until well blended. Pour the liquid ingredients over the dry ingredients and whisk gently to combine. Melt butter, once melted fold in to the mixture along with the salmon, onion and dill.
Ladle batter into the preheated waffle iron and cook waffles until golden brown.
Serve with a generous spoonful of crème fraiche (or sour cream) and top with more smoked salmon if you choose.
