Sourdough Bruschetta with Cashew Nut ‘Cream Cheese’ and Strawberries

Ingredients

1 cup raw cashews, soaked in water 4-8 hours, drained and rinsed

1-2 tbsp. lemon juice, to taste

1/2 tsp salt, or to taste

2-3 strawberries sliced

 

Method

Using a food processor, blend the cashews along with the salt and 1 tablespoon of the lemon juice until you have a smooth mixture

Add a tablespoon or two of water to thin the mixture as needed and add more salt and/or lemon juice to taste

Spread on a slice of the sourdough bread and top with the sliced strawberries
