Ingredients :
1 red chilli
1 clove garlic
1 tbsp olive oil
2 free range eggs beaten
2 tbsp grated parmesan cheese
80g dried spaghetti or 125g cooked pasta
Method:
Pre heat a non stick frying pan on a medium heat.
Finely chop the garlic and red chilli and add to the pan with a splash of olive oil.
Whisk together two eggs, season with salt and pepper and pour over the chilli and garlic.
Add the cooked spaghetti and spread out evenly.
Sprinkle with the grated parmesan cheese and continue to cook on a medium heat or pop under the grill for 2-3 minutes until golden.
