Start your day the right way

My new year’s resolution to eat healthy is going better than expected and I have only fallen off the wagon a couple of times! I have taken healthy lunches to work each day (see my last blog post if you are still struggling for tasty, nutritional lunches) and I’m enjoying cooking healthy family meals in the evenings. However, (like many of you I’m sure!) my life seems to have become even busier and since having my daughter, mornings are totally chaotic and I end up running out the house with baby under one arm and a pile of paperwork under the other – with absolutely no sign of breakfast !

I needed a solution to my breakfast troubles and one that was quick and easy to pick up of a morning but still healthy and most importantly tasty. I wouldn’t be able to stick to something if it was tasteless and uninteresting! The solution to my problem came in the form of Granola bars, they are so simple and quick to make, I can make them in batches of 12, meaning I don’t have to worry for a few days about what I’m going to have and best of all I can adapt the recipe to add any flavours I fancy from fruit to the occasional chocolaty treat.

I have been using a really simple recipe that tastes amazing and as long as you store the bars in an airtight container they last for a week.

Granola Bars

Ingredients

8 ounces rolled oats

1 1/2 ounces sunflower seeds

3 ounces sliced almonds

1 1/2 ounces wheat germ

6 ounces honey

1 3/4 ounces dark brown sugar

1 ounce unsalted butter

2 teaspoons vanilla extract

1/2 teaspoon salt

6 1/2 ounces chopped dried fruit

Method

Butter a 27cm x 21cm (10½" x 8") inch baking tray and set aside. Preheat the oven to 180°C / 350°F.

Spread the oats, sunflower seeds, almonds, and wheat germ onto a roasting pan. Place in the oven and toast for 15 minutes, stirring occasionally.

In a medium saucepan combine the honey, brown sugar, butter, extract and salt, place over medium heat. Cook until the brown sugar has completely dissolved.

Remove the oat mixture from the oven, add the oat mixture to the liquid mixture, add the dried fruit, and stir. Place mixture into the baking dish, place in the oven to bake for 25 minutes.

Remove from the oven and allow to cool.

Cut into squares.
