Sweet Potato & Black Bean Burgers with Peanut Sauce

Burger ingredients:

2 large sweet potatoes

1 ½ cups cooked black beans

1 cup cooked brown rice

2 spring onions

2 ½ tsp cumin

1 tsp paprika

1tbsp olive oil

Pinch of salt and pepper

 

Peanut Sauce ingredients:

1 garlic clove

6tbsp smooth peanut butter

2.4tbsp lime juice

1tsp freshly grated ginger

1tbsp maple syrup

Pinch of cayenne pepper

1-2tbsp water (if needed)

 

Method:

Preheat the oven to 200 degrees Celsius.

Peel sweet potatoes and cut in half. Rub with olive oil and place on a non-stick baking tray. Bake for 30 minutes.

Mash the black beans in a mixing bowl then add the sweet potato and mash lightly.

Add the rice, spring onion and spices and mix.

Mould into burger shapes and place on a non-stick baking tray.

Bake for 30-40 minutes. Turn half way through cooking.

 

For the Peanut Sauce:

Add all ingredients to a bowl and mix thoroughly.
