Three Cheese Mac n Cheese


100g Unsalted Butter, plus a little more for buttering
3 tbsp. Flour
750ml Whole milk, hot
350g Mature Cheddar Cheese (Grated)
150g Gruyere (Grated)
150g Parmesan (Grated)
600g Macaroni
1tsp Mustard Powder or Paprika

For the topping

40g Unsalted Butter
100g White Breadcrumbs
150g Mature Cheddar Cheese (Grated) 
50g Parmesan (Grated) 
Fresh Thyme Leaves


Preheat the oven to 200C/Gas Mark 6.

Butter a large ovenproof dish.

For the cheese sauce, melt the butter in a pan over a medium to low heat and stir in the flour. Continue to stir for a few minutes.

First heat up your milk. Now slowly whisk the heated up milk into the cheese sauce. Bring the sauce to the boil whilst still whisking then reduce to a simmer and whisk for a couple more minutes.

Add the cheeses and mustard powder or paprika, season and stir, until smooth.  Then remove off the heat.

Cook the pasta as per the packet instructions, but for a couple of minutes less as you’ll be placing it in the oven later.   

Now drain your pasta and return to the pan and stir in the cheese sauce, until it’s all coated.

Spoon your cheese sauce and pasta into the dish.

For your topping melt the butter, then stir it in a small bowl with the breadcrumbs, mature cheddar and parmesan, until all ingredients is combined.

Sprinkle your topping evenly over the pasta.

Bake in the oven until bubbling and golden for around 25 to 30 minutes.

Leave it to sit for 10 minutes before serving.

For the last step add your fresh thyme leaves.
