200 g mascarpone
2 tbsp Marsala or sweet sherry
500 ml double or whipping cream, lightly whipped
4 tbsp Fairtrade caster sugar
100g sponge fingers
2 tbsp instant coffee, made up to 400ml with boiling water
2 tsp cocoa powder


Mix the mascapone and Marsala or sweet sherry until soft, then add in the sugar and fold into whipped cream.Dip in 2 sponge fingers into the coffee mixture and lay them into the base of the serving jar. Layer with the cream mixture and then repeat to form another layer of sponge and cream. Finally, dust the top of the tiramisu with cocoa powder.
