Ingredients:
1tbsp olive oil
4 chicken thighs
100g sliced chorizo
1 x 400g tin chopped tomatoes
2 cloves garlic (crushed)
1tsp Dried oregano
125g mozzarella (sliced)
1 large tomato (chopped)
Pinch of salt & pepper
Method:
Preheat oven to 200 degrees Celsius.
Season the thicken thighs with salt, pepper, oregano.
Heat the olive oil in a pan and add the chicken thighs, sliced chorizo, chopped tomatoes and garlic.
Heat for 10 minutes until golden brown.
Turn the chicken and place in the oven for 15 minutes.
Remove from the oven and top with the mozzarella and fresh tomato. Cook for another 5 minutes.
Remove from the oven and serve!
