Tuna and Avocado Burgers

Ingredients

2 x 200g cans of tuna, drained

100g breadcrumbs

1/2 lemon zested and juiced

1 egg

2 tbsp. rapeseed oil

1 tbsp. parsley, finely chopped

1 avocado ripe

4 Seeded buns

Salad and dressing optional

Method

1. In a large bowl, mix all the ingredients together

2. Refrigerate for 30 minutes

3. With your hands, split the mixture into 4, roll into balls and flatten to make your patties

4. Coat your griddle with a little low calorie cooking spray

5. Griddle each pattie for 3-4 minutes each side

6. Pit and slice your avocado, layer the slices on top of the patties

7. Place the patties inside the buns and add salad of your choice
