Ingredients:
500g strong white bread flour
10g of dried yeast
10g of salt
325ml of water
400g tin of chopped tomatoes
1 clove of garlic
1/2 tsp mixed herbs
Salt and pepper
2 balls of fresh mozzarella
10 cherry tomatoes, cut in half
1 red onion, sliced
30g capers
25g parmesan cheese
1 handful of fresh basil
20ml extra virgin olive oil
Method:
Place 100g of flour into a bowl with one teaspoon of yeast and 150ml of water and mix, then leave out on the side for 1 hour to begin fermenting this will help develop the flavour and result in a better-tasting pizza base.
Weigh out the remaining flour, yeast, salt and water and mix all with the fermented flour mixture.
Mix the dough with your hands until you have a softball of dough, then transfer to a lightly floured work surface and knead for 10 minutes until smooth and stretchy.
Roll the dough into a ball and cover with the mixing bowl, and leave to relax and prove for 30 minutes.
Cut the dough into 4 portions and roll into balls, then roll out into thin pizza base.
Pour the tinned tomatoes through a sieve to remove the water and mix with chopped garlic and mixed herbs to make your pizza sauce.
Before spreading on your pizza base, season the sauce with salt and pepper.
Top your pizza bases with the tomatoes, sliced onion and capers.
Tear the mozzarella cheese up and scatter over the pizza.
Finish with grated parmesan cheese and a drizzle of olive oil.
Bake in a preheated oven at 200°c for 8-10 minutes.
Scatter over basil leaves before serving.
