Welsh Cakes

Ingredients

225g plain flour 

1tsp. mixed spice

85g caster sugar

110g butter

50g mixed fruit

1 egg beaten

A little milk (if required)

Method

Sift the flour, sugar and mixed spice into a bowl and rub in the butter until mixed and crumbly

Add the dried fruit and the egg and combine with the mixture until you have a soft dough (add milk if too dry)

Flour your work surface and roll out the dough about 1cm thickness. Cut out using a round cookie cutter

Grease a griddle pan and place over a medium heat

Cook welsh cakes for about 3 minutes each side, until brown and crisp

Serve with a dusting of icing sugar and enjoy with a glass of cold milk
