2 eggs

350ml of eggnog

2 tbsp rum

230g white sugar

1 tsp vanilla extract

115g butter (room temperature)

270g all purpose flour

1 pack of vanilla pudding mix

2 tsp baking powder

½ tsp salt

½ tsp ground nutmeg


Preheat oven to 180°c

Into a large mixing bowl combine eggs, eggnog, rum, sugar, vanilla and butter. Mix well but bear in mind that the butter will remain lumpy, this is normal.

In a separate mixing bowl sift the flour, pudding mix, baking powder, salt and nutmeg and combine well.

Add the dry mixture to the wet mixture, don’t over mix trying to remove the butter lumps as these will melt when cooking.

Transfer your mixture to your loaf tin.

Bake for 45-55 minutes or until a cake tester comes out clean.

Cool on a wire tray.

Serve with cream, custard, us just a nice cup of tea.
