Healthy Greek Salad
Ingredients
50g feta cheese (low fat)
5 olives (in brine)
2 tomatoes, quartered
1/2 green pepper, chopped
1/4 cucumber, sliced
50g red onion, sliced
1 tsp. balsamic vinegar
Sprinkle of salt and black pepper
A few basil leaves
Method
Add feta, olives, tomatoes, green pepper, cucumber, red onion and basil into a small bowl and toss together
Add the balsamic vinegar, salt and pepper and toss again
Refrigerate for an hour for the juices to come out
Toss again and serve
