Baked Asparagus Fries


1 pound of asaparagus, trimmed

1/4 cup plain flour

1 cup of breadcrumbs

1/2 cup parmesan cheese, grated

2 large eggs, beaten

Salt and pepper to taste


In a large bowl, combine the breadcrumbs and parmesan cheese. Add salt and pepper to taste

In two smaller bowls add the flour to one and the egg wash to the other

Take an asparagus spear and dip into the bowl of flour, then into the bowl of eggs making sure it is fully covered and then into the breadcrumb mix, coating completely

Repeat with each spear

Place coated asparagus spears onto a baking sheet and place in an oven pre-heated to 200°C for around 15 minutes or until golden
